Cocina de Mercado

Restaurant in Playa Conchal, Guanacaste, Costa Rica.

Cocina de Mercado sits inside W Costa Rica - Reserva Conchal on the Cabo Velas coast of Guanacaste. It is the hotel's market-style restaurant, open for breakfast, lunch, and dinner. Cooks work in an open show kitchen with a pizza counter and a griddle station. Seats face those stations or sit on an outdoor terrace looking toward Playa Conchal bay.

Latin American and Mediterranean cooking share the menu with Costa Rican plates built around local ingredients. That all-day structure is the practical reason to put it on a Conchal itinerary. You can eat here in the morning, again at midday, and once more after the heat without leaving the W property.

Why the three seatings matter on this beach

Playa Conchal is a shell beach on a dry, bright stretch of Guanacaste coast. Mornings are the comfortable hours for sand and swimming. Midday heat pushes people toward shade, lunch, and a pool. Evenings cool enough for a longer meal.

Cocina de Mercado's breakfast, lunch, and dinner follow that clock. Breakfast is the on-property start, with homemade local plates and fresh juice before the beach. Lunch is the sit-down pause when you want to stay inside Reserva Conchal. Dinner is the return after the WET Deck, Zona Azul, or a day off the resort.

Hotel guests use it as the breakfast room and as a no-transfer lunch or dinner. Visitors staying elsewhere in Reserva Conchal dine here with a reservation. If your table mixes a casado, a vegan plate, and pizza, this is the W kitchen set up for that spread.

The rest of the hotel's dining map helps you choose. Latitud 10° Norte is Thai-inspired fine dining with tasting menus and a la carte in the evening, closed Monday. Zona Azul is the beach club for coastal plates through the day. WET Deck is the poolside stop for lighter food. The Living Room pours cocktails and bocas from late morning until late.

What comes off the market stations

Snacks stay close to the market idea. Guacamole is served with seasoned corn tortillas. Pejibaye hummus blends peach palm and chickpeas. Green-plantain nachos come with black beans, pico de gallo, avocado, and plant-based cheese sauce. Ceviche is dressed with red onion, sweet pepper, cilantro, and a ginger-lime marinade, with plantain chips.

Sweet-plantain causa is layered with smoked refried beans and garlic shrimp. Chorreadas de panceta pair crispy pork belly with fresh cheese, avocado, cilantro, and sugarcane syrup. Those starters work well if the table wants to share before mains arrive.

Salads include a classic Caesar and a kale plate with roasted-citrus vinaigrette and crispy chickpeas. There is also watermelon with fresh cheese and basil. A tropical mix brings heart of palm, grilled pineapple, and passion-fruit chili dressing.

Comfort dishes cover a wagyu burger with ripe plantain and caramelized onion. An oyster-mushroom burger sits on a vegan bun with sweet-potato fries. The list also includes a beef-and-cheese baguette and quesadillas with chicken, beef, or shrimp. Tuna tacos come marinated in wasabi and soy. Gallos are offered with chicken or textured soy.

Pizzas from the oven use homemade dough. Toppings include pepperoni, ham and cheese, buffalo chicken, and avocado. Mains include beef tenderloin with avocado rice and pan-seared red snapper with rosemary potatoes and escabeche. Chicken breast stuffed with turkey ham and mozzarella comes over yuca puree.

Casado is the Costa Rican plate of rice, beans, chayote stew, fried sweet plantain, and corn tortillas. It is offered with seitan, chicken, beef, or fish of the day. Desserts are caramelized pineapple cake, cheese flan, a coffee-filled cake, and assorted popsicles. Vegetarian dishes are part of the regular menu, and vegan and gluten-free options are available.

Open kitchen, terrace, and themed nights

The dining room is designed as an open market rather than a closed kitchen. Cooks work in view. Executive chef Diego Mollenhauer leads the kitchen. Cuisine spans international, Latin, Mediterranean, Spanish, South American, and Costa Rican cooking.

Service is at the table. Reservations are taken, and takeout is offered. The space is wheelchair accessible and non-smoking, with a full bar and wine. American Express, Mastercard, and Visa are accepted. The tone is casual dining.

Choose the terrace when you want the bay in front of you. Choose the kitchen side when you would rather watch the stations work. Both are on the W Costa Rica grounds inside Reserva Conchal.

Themed evenings rotate through the calendar. They include Peruvian Night, Tikaribe with cooking from Costa Rica's Caribbean side, and Calacas y Sabores, which brings Costa Rican ingredients into Mexican recipes. Those nights book for parties from a couple up to about twenty people. The regular menu still covers the rest of the week.

Reservations, hours, and the gated entrance

Book by phone at +506 2654 3600. The W dining team also takes WhatsApp at +506 8489-7458. Breakfast, lunch, dinner, and themed nights can all be reserved. Mention gluten-free or vegan needs when you book so the kitchen can steer you.

Service is split into three meals, with a break between lunch and dinner. Lunch runs from noon to 3:00 p.m. Dinner returns from 6:00 p.m. to 10:00 p.m. Weekend breakfast can run later than the weekday morning, so confirm the first seating when you reserve.

Reserva Conchal is gated. If you are coming from outside the resort, settle gate access when you make the reservation rather than arriving from the public beach without a booking. Around Easter and in the last weeks of the year, entry to the W can be limited.

A reserved table is then the difference between eating here and being turned toward another restaurant in the community. Have a card ready. A light layer helps on the terrace after sunset. If you are coming off the shell beach, leave time to rinse sand before dinner. The room is casual, but it is still table-service dining inside the hotel.

A simple loop through Reserva Conchal

A clean day looks like this. Breakfast at Cocina de Mercado, late morning on Playa Conchal, then lunch back at the market kitchen or a lighter plate at Zona Azul. Rest through the afternoon. Finish with a regular or themed dinner here, or a tasting menu at Latitud 10° Norte if you want a more formal night.

That loop keeps you inside Reserva Conchal and uses Cocina de Mercado for the meals where a broad, local-ingredient menu matters most. When you reserve, say whether you want the terrace or the kitchen side, and whether a themed night is on. Then walk from breakfast to the shell beach without leaving the community.
