Road Less Traveled Cuisine
Restaurant in Playa Potrero, Guanacaste, Costa Rica.
Road Less Traveled Cuisine, or RLT Cuisine, is a farm-to-table culinary team based in Playa Potrero, Guanacaste. The group cooks where the table is: luxury villas, beach clubs, fincas, boats, and a four-seat kitchen of its own. Menus are built around what local farms and Pacific boats actually delivered that day, then served across Playa Potrero, Flamingo, Las Catalinas, Tamarindo, Papagayo, and Nosara, with travel farther arranged on request.
Four seats in the Playa Potrero kitchen
The RLT Food Lab is a chef's table inside the team's kitchen in Playa Potrero. Four guests sit in an open kitchen for a surprise tasting with no published menu and no fixed sequence. The night follows the Pacific catch, nearby harvest, and what the chefs believe is worth cooking. Some plates return in another season in another form; others exist only once.
Dietary needs shared in advance shape the menu without turning it into a side-plate workaround. Gluten-free, lactose-free, vegan, and allergy-specific cooking are full menus. Vegetarian, pescatarian, kosher, and children's notes can be added on the enquiry. Kosher meals are sourced through recognised suppliers and need extra time. Between courses, the team tells the story of the food in English or Spanish.
Evening seatings are how this kitchen runs, with very few chairs, so the date and sitting time belong in the first message you send. Groups larger than four are steered toward a villa dinner, an outdoor table, or a celebration menu.
Villa nights and a chef for the day
Private Dining In-Residence makes a rental kitchen the restaurant for one night. Private Chef for the Day covers a half day or a full day when the house wants to stay home and eat well. The team arrives early with ingredients, equipment, glassware, and people. After the last course they leave the kitchen spotless, trash out, plates put away.
These formats fit the villa geography of Potrero, Flamingo, Las Catalinas, Tamarindo, and Papagayo. Property managers and concierges can use a partner programme designed for rental homes. Send the date, how many people, where you are staying, and anything that should change the cooking: allergies, kids, a birthday. You receive a written menu and price before you commit.
Beaches, fincas, yachts, and the bar
Outdoor Dining Experiences turn a Guanacaste beach, finca, or other open setting into a dining room. Setup, table, menu, and service from first drink to last course are part of the production. Groups from 6 to 50 can choose a tasting menu built as one culinary story or a family-style feast meant to be passed around.
Menu starting points include The Road Less Traveled, a chef-curated tasting of the day's ingredients; Secrets of the Sea, built on Pacific catch such as corvina ceviche; Over the Embers, local beef with ancestral Guanacaste fire techniques; Los Tacos Ticos, with brisket, chicken, and handmade tortillas in a Costa Rican taco format; Costa Rican Grill, offering grilled fish with herb butter, beef rump, slow-roasted pork, or chicken, with vegetarian options; and Caribbean Soul, with Limón-leaning flavors such as corvina ceviche with mango and Panamanian chile. Pass-arounds can join family-style meals. Tasting menus stay a closed sequence, and drinks are already included on those tastings.
Craft Bar and Mixology can be booked for a gathering of any size or added beside dinner. Beverages are quoted separately except on tasting menus and the Premium package. Transport is quoted by area. If a venue has no full kitchen, equipment is a separate line.
Private Chef On Board is for yacht charters and day trips. Loading and chef timing depend on where the boat leaves: Marina Papagayo, Flamingo, Playa Potrero, or another marina. Share the departure point early so the kitchen and the dock stay in sync.
Weddings, retreats, and hands-on classes
Weddings and Celebrations cover intimate ceremonies through large parties. The meal is designed around the couple, the venue, and the people at the table, using the same tasting and family-style menus as outdoor events when those shapes fit. Ingredients, cooking, plating, chef service, dietary menus, and a full kitchen clean-down are always in the price. Extra servers, most beverages, area transport, and missing kitchen equipment are quoted on top.
Retreat and Wellness catering follows a programme rather than a single seating. Plant-based menus, allergen-aware cooking, and odd meal times are normal requests. Morning bowls before the first session, lunch between workshops, and a dinner that closes the day can be written as one board.
Cooking Classes bring groups of 4 to 12 into the kitchen for a morning or afternoon. No experience is required. You cook with local ingredients, eat the meal, and leave with recipes. Classes are the daytime counterpart to the Food Lab and suit friends, families, and anyone who wants Guanacaste technique in their hands rather than only on a plate.
Planning a day around Potrero and the coast
Match format to headcount and place first. Four diners who want the kitchen tasting use the Food Lab. A houseful of guests usually wants in-residence dining or a chef for the day. Six to fifty people outdoors need the outdoor production. A boat day needs the on-board chef and a marina. A wedding or retreat should be treated as a full culinary build, with service team and drinks priced in from the start.
When you write, include the date or month, guest count, area, and diet notes. Booking areas include Playa Potrero, Flamingo, Las Catalinas, Tamarindo, Papagayo, Nosara, elsewhere in Guanacaste, and outside the province. Children aged 8 to 14 receive a 50 percent discount; younger children can be arranged. WhatsApp and phone share +506 8735-1877; bookings land at bookings@rltcuisine.com. A quote with the proposed experience, menu, and full price typically returns within 24 hours, with no need to commit in the first note.
Playa Potrero sits on Guanacaste's northern Pacific shore, a short hop from Flamingo and Las Catalinas and a longer coastal drive from Tamarindo and the Papagayo peninsula. For the Food Lab you travel to Villaggio Flor Del Pacífico in Playa Potrero. For every other format the kitchen comes to you, which is why transport appears as its own line once you leave the immediate area.
A Potrero day can hold a morning on the beach or a boat, a cooking class late morning, a long rest through the afternoon heat, and a Food Lab or villa dinner after sunset. Guests staying in Papagayo or Las Catalinas often keep the chef in the house so nobody navigates unlit roads after a long tasting. Dry-season nights favor outdoor tables; villa kitchens and the Food Lab still work when rain moves through. Leave extra time on coastal roads if you are driving in for an evening sitting.
Chef Gilberto's team frames farm-to-table as buying from farms and boats they know by name, then cooking that story at the table. If you care about origin, say so when you describe the night you want: Pacific catch, wood fire, Costa Rican grill, or a fully plant-based retreat board. The written menu you receive before you book is the place to see how that request lands.
